Just like playing pool or golf with a turret. Set up your turrets then press start to try and get them to knock the ball into the goal. It is possible to rotate your turret 90 degrees at a time then tweak its rotation simply by dragging the slider. The turret is activated when the target ball touches the green pad next to the turret. From level 11 onward your ball can be destroyed by obstacles.
